Description from the Producer
Winemaking: All fruit for this wine was harvested October 19th, 2023 using the Opti-cleaner, optical sorter ensuring only the best quality. Fermented for 12 days post 4-day cold soak to ensure colour and tannin extraction. After fermentation was complete the wine was pressed of its skins and barreled down November 14th. The Merlot was then aged for 18 months in a combination of American Oak and French oak barrels. Â
Tasting Notes: Bold & complex, a small batch Merlot is a true expression of the vineyard & terroir. Barrel aged for 18 months in French & American oak creating a wonderfully complex red wine with aromas violet, ripe cherry, plush plum, and subtle notes of baking spices. Discover a palate with flavours of blackcurrant and anise with hints of toffee and oak. Match with grilled lamb or beef, Roast chicken with roasted vegetables or aged hard cheeses.
