Tasting Notes: Peach, golden apple, lime, and slight biscuit are the hallmarks on the nose of our Celeste Traditional Method Sparkling. Expect these flavours to reverberate on the palate supports a full mousse and richly textured mouthfeel that leads to a long finish with floral, almond, and citrus flavours.
Food Pairing: Pacific oysters, lemon chicken, charcuterie
Winemaker’s Notes: Fruit for this wine was harvested at the desired ripeness, processed gently, and fermented separately under cool conditions using selected yeast strains. After 14 months the wines were disgorged and left “natural”, using only the finished wine itself as the dosage.
