Tasting Notes: The glass opens with notes of florals, strawberry compote, and mushrooms. Dried petals, spices, and cranberry round out the nose. The mouth is full and slightly creamy from lees contact, showcasing a beautiful balance between the fruit and acids. That great acidity cleanses the palate as herbs and fresh red fruit charm our senses. The finish is fruity, floral and slightly earthy.
Serve With: Grilled vegetable panini with chévre and tomato pesto, pizza (salty meats or veggies), charcuterie, patios, friends, and a summer evening.
Winemaking: Cold soaked for 2 days whole cluster, then destemmed and pressed. Fermented in 100% stainless steel for 14+ days at 16 degrees. No malolactic fermentation.
Residual Sugar: <3 g/L
