The story behind Proxies
Proxies is a non-alcoholic wine alternative made by Acid League, a fermentation company that started in Guelph, Ontario, in 2020. It builds a wine-like drink from scratch, without ever starting from wine.
The line grew out of Acid League's work with vinegars and live fermentation, and it aims squarely at people who want something as interesting as wine, without the alcohol.
Built by blending
A Proxy is built by blending, which puts it closer to mixing a complex drink than to making wine. It layers together grape juices, brewed teas, verjus, spices, bitters, and Acid League's own fermented vinegars to mimic the acidity, body, and grip of real wine.
Each one is designed to echo a wine style and to pair with food. The drinks are vegan, gluten-free, and always under half a percent alcohol.
