Sauvignon Blanc is a passion of ours. We make many different styles and it all starts in the vineyard. This fruit is from the last pick of the harvest from our own estate vineyard. Very ripe at this stage, the flavours start to lean into more tropical fruit and make a wine with more body and structure. Fermented and aged in French oak barrels and puncheons for 12 months 2022 was a small but mighty vintage. Vineyard yields were tiny after damage from a very cold night in January. As always, Semillon and Sauvignon Blanc were fermented and aged separately in French oak before trials to perfect balance between the two. In this vintage, we felt the magic at 50/50: Sauvignon Blanc brings vibrance and freshness while Semillon brings depth and texture to this harmonious blend. RS: 2g/L
