TASTING NOTES
A classical Niagara interpretation of Côte de Beaune Chardonnay, this wine showcases a medium gold colour, courtesy of a blend of stainless steel Chardonnay and barrel aged Chardonnay. Notes of green apple, Bosc pear, almond and butter dominate the nose, owing to autolytic character through batonnage and malolactic conversion. The palate mirrors the nose, with more pronounced brioche, pastry, vanilla and butterscotch on the tail of the palate, with a medium plus finish.
FOOD PAIRINGS AND SERVING TEMPERATURE
When pairing, look to foods that have salt and acidity, thereby making the wine perceptively smoother, richer, fruitier and less bitter / acidic. Dishes like Enchilada stuffed pasta shells or lentil Bolognese will help brighten the wine, while still showcasing it’s intense aromatic and palate profile. Alternatively, dishes like pine-nut crusted Tilapia and broccolini with lemon will highlight the textural components of this Chardonnay, whilst delivering acid and umami notes.
Aim to serve this wine between 10-13◦C.
