Tasting Notes: This Merlot is garnet in colour with an aromatic bouquet of baked blue plum, black cherry, spice box, and oak. This medium- to full-bodied wine has soft drying tannins, and flavours of ripe black fruits accented by notes of spice. Lovely notes of black tea, black cherry, blackberry, and spice linger on the finish.
Food Pairings: Excellent with roasted quail; pheasant; grilled lamb chops; cold beef wraps; grilled T-bone steaks; Portobello mushrooms; bean stews; beef brisket; pot roast; one-year old Canadian cheddar and Bellavitano Merlot cheeses.
Winemaking: The Merlot grapes were harvested from Oliver and Osoyoos regions within the Okanagan Valley. The grapes underwent traditional red wine making, 12 months aging in French and American oak barrels for added complexity, and a full malolactic fermentation to soften the mouthfeel.
