WINEMAKING
The (46%) Merlot, (14%) Cabernet Franc, (8.5%) Syrah, (8.5%) Gamay Noir, (8.5%) Rotberger, (8.0%) Pinot Noir and (6.5%) Malbec grapes were directly pressed developing a pretty coral pink colour; after pressing the juice underwent a 21-day cool fermentation in stainless steel tanks. To maximize the fruit flavours, strict temperature control was employed during the fermentation process. [At Gray Monk we have three blocks of Rotberger, planted in 1978, 1996 and 2000. Rotberger is a German red wine grape, a cross of Riesling and Trollinger produced at Geisenheim in 1928.]
FLAVOUR PROFILE
A glimmering delicate pink colour with a clean fresh aroma of red berry, watermelon, and Rainier cherry. The medium bodied, refreshing, off-dry mouthfeel has flavours of red currant, tangy red berries, and melon. Tangy red fruits, pink grapefruit, and rhubarb notes linger on the refreshing finish.
SERVING SUGGESTIONS
Summer in a glass. Serve with Margherita pizza; Tapas; Greek salads; crab cakes; baked salmon; gazpacho; cold cuts and charcuterie; shellfish; roast pork; pork tenderloin with rhubarb sauce; savoury chicken tagine; tourtiere and tangy chili sauce; turkey with cranberry sauce; feta cheese; feta bruschetta.
Serving Temperature To enhance the fresh fruity mouthfeel, serve at 10 to 12˚C.
