This wine highlights the delicacy and fruit-forward notes of whole-bunch-pressed Pinot Noir, exhibiting savoury herbal notes with texture from concrete fermentation and ageing.
Vin Gris was made from Pinot Noir grapes grown at Garnet Valley Ranch in Summerland. The wine was whole bunch pressed to small concrete eggs, fermented with natural yeasts and went through full malolactic fermentation and was bottled unfiltered.

Natural, zesty, creamy. Pursuing a sense of place and embracing vintage variation, Free Form wines are made from organic grapes, native yeast and are free of additives. These wines are fermented in concrete tanks or clay amphorae. Extended skin contact is used, followed by a gentle pressing and further rest before bottling. They are free of rough handling and commercial additives, and contain little to no sulfites.
The Vin Gris is whole bunch pressed organic Pinot Noir from Garnet Valley Ranch remains white due to no skin contact between juice and skins. It was fermented and aged in concrete tanks. Star fruit and dusty red berries, tealeaf, orange rind and crushed stone flavours lead to a zesty palate. Dry with a creamy textural weight (thanks to lees aging) it's a restrained wine with suggestions of earth, mineral and citrus.

Bosc pear, meadow grass, wild herbs rule the streamlined palate, with ripe gooseberry and white peach on the gently cushioned, lees-bedded palate, finishing with a wash of stones and rasp of salty parmesan. A very interesting wine that transcends grape.

Nose: Wild strawberry nose with a thread of minerality.
Palate: Medium-bodied, dry, ripe red apple flavour with balancing acidity. Lovely mouthfeel and elegant, a seamless wine.

Food Pairing: Kale and pesto lasagna rolls, coconut and macadamia-crusted salmon, flatbread with hummus and sun-dried tomatoes, jerk shrimp and pineapple rice bowls, and Mediterranean chickpea salad.
