This small-lot Pinot Noir captures the essence of wild fermentation and whole-cluster winemaking , resulting in a wine of incredible depth, complexity, and elegance. With 30 days on skins and 22 months in 100% French oak , this wine is structured yet refined, built to develop beautifully with age. Tasting Notes This Westcott Pinot Noir opens with aromas of floral notes, citrus, and cola , followed by subtle hints of baking spice and dark cherry . The palate features firm tannins and lively acidity , which will soften and integrate with time , offering a layered and evolving drinking experience. Winemaking Details 100% wild fermentation and whole-cluster fermentation . Fermented in three open-top, one-ton oak fermenters . 30 days on skins , extracting structure and intensity. 22 months aged in 100% French oak , with no new oak to maintain purity of fruit.
