Tasting Notes: Merlot has always been a champion grape at Ferox, due to terroir, viticultural practices and winemaking techniques. This vintage was no exception, with the wine showcasing a multi-faceted aromatic profile, and weight and power on the palate. Primary fruit aromatics are rooted in blueberry compote, plum and blackberry, with subtle floral and herbal notes, in the form of violet and mint. Sweet tobacco, chocolate and cedar form the backbone of secondary aromas, due to two years in used and neutral northern French oak barriques. The palate mirrors the nose, with pronounced blueberry, semi-sweet chocolate, white pepper and liquorice. The tannins are chalky (given its youthfulness), but are integrated well around the balanced acid. The finish is long, with particular note to autolytic influence; graham cracker and pastry draw out the plethora of fruit. Given the power of this wine, age for 6-12 month, and then continue to enjoy over the next 15-18 years.
Food Pairings: When look at food options, aim to pair with dishes that contain generous salt and acid, in increase the level of perceived sweetness and fruitiness in the wine, thereby balancing the combination. Dishes like Tortellini with sausage and Mascarpone, or a sausage Florentine Shepherd’s pie will balance the tannic structure of this wine, while still playing to the savory components in the dishes; salt and lipids are key. Alternatively, Lehmejun (Armenian pizza) is a great option, due to the presence of ground beef and lamb, but the sumac will juxtapose the spice in the aromatic profile of this wine. A vegetarian option like roasted cauliflower pasta with toasted walnuts, parsley, garlic and lemon zest, brings acid, salt and umami flavours to balance the body and structure of the 2020 Merlot.
Aim to serve this wine between 15-18◦C
