60% Merlot, 35% Cabernet Sauvignon, 3% Pinot Noir, 2% Cabernet Franc
2020 is hailed by the industry as the vintage of the century in Ontario. This Bordeaux red exemplifies this vintage with rich, ripe fruit flavours and strong structure. Each batch was fermented and aged separately before blending
trials were done to create the perfect assemblage for this wine. Each variety
brings its own characteristics to create overall complexity and enjoyment.
On the nose: Lots of deep, dark fruits like black raspberry, cherry and blackberry with
some eucalyptus, leather and sweet tobacco.
In the glass: Deep, rich flavours of black raspberry, dark chocolate with hints of earthy
sage. Full-bodied with ripe fruit and fine grained tannins.
Food pairing: Burgers, wild boar sausage, steak au poivre, Jamaican beef patties, hearty
lentil stew, mapo tofu.
Residual Sugar: 5.5 g/L
