TASTING NOTESGracious aromas of honeysuckle, yellow apple, papaya and quince. On the palate flavours of grapefruit and pear with a rich minerality and elegant finish. Pair with chicken cordon bleu with a side of warm potato salad with fresh herbs like chives and parsley. Will also match with ceviche, salad greens with walnut crusted goat cheese and honey drizzle, pad thai or bánh mì sandwich.
VINTAGE & VITICULTUREA mild winter followed by a warm spring led to early bud break, raising hopes for an abundant harvest. However, the summer brought unexpected challenges, including sporadic heatwaves and intermittent rainfall. Careful management of the vines, coupled with the utilization of advanced viticultural practices, ensured the grapes reached optimal maturity. Conditions for harvest were quite favourable, with wineries reporting a broad window of opportunity to bring in grapes.
WINEMAKER’S NOTESAfter harvest, grapes were crushed and pressed, selected yeast was used for the cold fermentation to maintain aromatics and crisp acidity. This variety is only grown in a few vineyards in Niagara but it continues to impress us as the vines age.
