Pinot Noir

An elegant bouquet showing classic aromas of black cherry, wild raspberry and savoury beetroot. The palate is rich and silky with moderate tannins finishing with a hint of dark chocolate. We wanted this pinot noir to showcase the elegant character of Niagara pinot without excessive oak influence.

Food Pairing: Roasted duck with cherry jus and crisp potatoes. Tourtiere, beet and goat cheese risotto, peking duck, cream of mushroom soup, cassoulet, porchetta sandwiches.

RS: 3.0 g/L

Winemaking: 100% Pinot noir from our Estate vineyard, blending clones #115 and #667. 3-day cold soak on the skins with ~10% whole bunch, followed by fermentation in tank and 1-tonne bins using both cultured and wild yeasts. 12 months in older French oak barrels before selection of the most harmonious expressions of the vintage. Extended bottle ageing before release to allow resolution of tannins.

Appearance: Ruby colour with a tawny hue.
Nose: Mature nose of raspberries, oak spice with a barnyard note (like fine Burgundy).
Palate: Medium-bodied, dry, elegant, well-balanced, raspberry flavour with racy acidity. A well-made wine. Lovely mouth feel.
Quality: 91 points – Wine Club Canada. Outstanding. Drink now and over the next two years.

Food Pairing: Filet mignon, mushroom risotto, chicken pot pie, potato and dill perogies on a bed of sautéed onions, and lamb with tzatziki.
