This sophisticated Rooster changes expression at each approach, showing an ever-changing bouquet of cherry, red berry, and plum fruit, along with smoky oak, cedar, and spice. This is a medium- to full-bodied merlot with soft yet drying tannins, and great structure and mouthfeel. The slight mid-palate sweetness shows ripe fruit flavours of plum and cherry mingling with notes of spice and oak. The extra-dry finish shows notes of black tea, cocoa, cherry, and a touch of black licorice and spice. Enjoy now to 2025.

    Appearance: Semi-opaque. Garnet colour.
    Nose: Dark cherry, blackberry, smoke, leather, savoury green herbal note.
    Palate: Medium acid, medium tannin, medium body. Black cherry, blackberry, dark chocolate, green pepper, vanilla, smoke, hint of black pepper. Savoury green herbs on the finish. Well balanced with velvety tannins.
    Quality: 91 points. Outstanding.

    Food Pairing: Indian butter chicken, sweet and salty grilled steak with cucumber salad, pulled pork ravioli with rosé sauce, vegetable lasagna, and sticky five-spice and plum Cornish hen with pear slaw.
