Suggestions of rich, ripe currant, blackberry, and plum on both the nose and the palate are balanced by hints of cedar, pencil shavings and tobacco. This is a full-bodied Franc with grippy tannins, delicious on its own or paired with aged Cheddar, red meat, charcuterie, and dark chocolate. Vinified from hand-picked 100% estate grown fruit (10yr old vines in 2018) in the Vinemount Ridge sub-appellation. After pressing, the wine was hand-plunged twice a day for 28 days in bins before transfer to tank to complete fermentation. The wine was aged for 22 months in French and American oak.

    Appearance: Semi-opaque. Medium garnet core.
    Nose: Dark cherry, earth, green pepper, smoke, hints of green herbs and pepper spice.
    Palate: Medium acid, medium tannin, medium body. Blackberry, black currant, dark raspberry, licorice, green pepper, and an herbal note. Hints of black pepper and smoke.
    Quality: Outstanding. 90 points. Drink now or hold 1 – 2 years.

     

    Food Pairing: Pepper-crusted beef tenderloin, dark chocolate-covered blueberries, lamb meatballs with raisin pesto, chicken stew with biscuits, and eggplant parmesan.
