Winemaking The (36%) Cabernet Franc, (29%) Merlot, (13%) Rotberger, and (9%) Pinot Noir grapes were given 5 to 15 hours of skin contact to develop a pretty coral pink colour, the juice was pressed off the skins and allowed a 21-day cool fermentation in stainless steel tanks. To maximize the fruit flavours, strict temperature control was employed during the fermentation process. The addition of Pinot Noir, Pinot Gris and other aromatic varietals provides a more fruit driven profile. At Gray Monk we have three blocks of Rotberger, planted in 1978, 1996 and 2000. Rotberger is a German red wine grape, a cross of Riesling and Trollinger produced at Geisenheim in 1928. Characteristics A delicate summer pink rose colour with a wonderful aroma of wild strawberry and red currant, with a touch of peach, melon, and summer flowers. The light to medium bodied, smooth yet refreshing, off-dry mouthfeel has flavours of red berries, watermelon, and peach. A fruit-bowl full of flavours (rhubarb, crab apple, pomegranate, pink grapefruit) linger on the refreshing finish.
