Aromas are a complex of cherry syrup, fruitcake, cedar and spice. Robust tannins reassure that this is a generously-bodied wine built for cellaring. Flavours bring thoughts of cooked dark fruit, cocoa and strawberry.
Picked at the Stouck family Vineyard on October 23rd as grape sugars averaged 23.7° Brix. After primary and malo-lactic fermentation, the wine was aged entirely in American oak. Initially the wine was divided, 40% to age in new American oak barrels and the remainder in older vessels. After ten months, all the wine was racked to age a further seven months in older barrels.
At the time of bottling, alcohol measured 13.5%, residual sugar 0 grams per litre, titratable acidity 6.7 grams per litre and pH 3.44. Vegan friendly.
Quantity bottled was 124 cases. Enjoy now to 2024.
Food Companions: Serve ear 14° C with roast chicken or turkey, mushrooms and pasta with meatballs or sausage and tomato-based sauces.

Appearance: Bright. Semi-opaque. Deep ruby colour.
Nose: Plum, black cherry, black currant, forest floor, fresh green herbs.
Palate: Medium acid, medium+ tannin, medium body. Plum, black currant, earth. Slightly stiff tannins make you sit up and pay attention. Velvety mouthfeel. Well balanced.
Quality: Very Good+. 89 points. Drink now or cellar for 2-3 years.
Food Pairing: Filet mignon with peppercorn sauce, roasted pork loin with red currants, mushroom and garlic chicken thighs, pear and gorgonzola ravioli with walnut balsamic drizzle, and lamb burgers with tzatziki.
