Description
The grapes for our Pinot Noir come from several vineyards in the southern Okanagan. The Pinot Noir grapes were cold soaked for 3 days and fermented on the skins for 7 days. The wine then spent 9 months ageing in 1-year-old French oak barrels.
A bright ruby red colour with a bouquet of cherry, wild strawberry, red licorice, delicate spice and a whiff of smoke. This gentle, loving Rooster has a light to medium frame with pure fruit flavours of red berry, red currant, cherry and crabapple. The food-friendly acidity brings excitement and the soft tannins assist in building structure. Fresh juicy red berries linger on the finish.
Pair with rigatoni and spicy sausage tomato sauce; mushroom lasagna; Portobello mushroom on tomato basil fettuccine; veal cutlets; duck breast salad; gourmet vegetarian pizzas with tomato, mushroom and roasted red pepper; La Sauvagine cheese with water crackers; cedar plank salmon.

Vineyard: Starz Vineyard (Kaleden, BC) and Anderson Vineyard (Oliver, BC)

Appearance: Medium ruby colour.
Nose: Lightly cedary, cherry and raspberry bouquet with oak spice.
Palate: Medium-bodied, dry, black raspberry flavour; well-balanced and true; nicely structured with a tannic lift on the finish. Very Burgundian in style.
Quality: Outstanding. Drink now or hold 2-3 years.
Food Pairing: Salmon filet with brown sugar glaze, blue cheese hamburger with caramelized onions, roasted duck and sweet potatoes, fried sesame garlic tofu, beef tenderloin and red wine au jus, creamy mushroom pasta.
