This 2017 Wild Ferment Chardonnay is the first vintage of our “Wild Ferment Chardonnay” series not sourced from our estate vineyard. This edition contains a fine variety of certified organically grown grapes. A delicious balance of refreshing acidity and sumptuous oak flavours, this is a chardonnay poised between drinkability and age-ability; enjoy now, but cellar for 3-8 years and enjoy an evolved experience. Chicken with sauce Supreme, cream-based pastas, or heavier seafood dishes such as grilled salmon or cod would be excellent pairings with this chardonnay.

Appearance: Golden straw colour.
Nose: A rich, spicy bouquet of peach and melon.
Palate: Medium to full-bodied, orange and pineapple flavours with a toasty oak note, voluptuously round mouth-feel and great persistence.
Quality: Outstanding quality. 91 points. Drink now and into 2020.
Food Pairing: Sheep’s cheese soufflé, lobster roll, Cornish hen with wild mushrooms, hazelnut crusted pork loin with wild rice, sea bass with fennel purée.
