A left bank Bordeaux-inspired blend, which was born from a need to produce a wine in our Elements Collection that provided a youthful, primary fruit driven aromatic profile, and a forest fruit and tobacco driven palate profile. The primary aromatics initially shows notes of violet, wild strawberry, blueberries, dewberries and blackberries, with subtleties of graphite and a light tobacco note once aerated, akin to Dominican cigars. There are some secondary aromatic notes; toast and butter, courtesy of autolytic and malolactic conversion. The palate mirrors the nose, with focus on pomegranate, raspberry and black cherry, with a hint of mint and tomato leaf. A medium bodied, acid focussed palate, alongside a medium plus finish is what allows this wine to be one of the most versatile in our portfolio.
FOOD PAIRINGS AND SERVING TEMPERATURE
When pairing, look to foods that focus on salt and acid, thereby increasing the perception of fruit, sweetness and toning down astringency, bitterness and tannins. Foods like slow-cooked honey garlic chicken noodles or a garlic chicken gnocchi skillet, marry lipids from the proteins, while also providing savory components to uplift the wine. Alternatively, dessert options like a dark chocolate Budino with candied walnuts or bittersweet-chocolate truffles can up-play tannic structure and perceived alcohol, while toning down primary fruit flavours.
