Tasting Notes: Drawing inspiration from the famed region of Mosel, Germany, this 2022 Riesling highlights a critical balance between sugar and acid, resulting in a complex and integrated wine. Primary aromatics are rooted in green apple, honeysuckle, apricot, Meyer lemon, lime and honeydew. A subtle note of orange blossom and orange peel become evident as the wine is allowed to micro-oxidize. The palate mirrors the nose, with a particular focus on white peach, Fuji apple and underripe mango. The acid is ever present, and well integrated, elevating the mid-palate and extending the finish of the wine.
Food Pairings: When pairing this wine, look to foods that have spice, umami or are slightly sweet, thereby increasing the body of this Riesling, balancing the fruit and acid, and allowing both food and wine to shine. Options like spicy coconut butter chicken with garlic naan will combine the heat and flavour of garam masala, cayenne, and turmeric, with the vibrant acid and fruit of this wine. A vegetarian option to consider may be roasted mushroom and chestnut Stroganoff.
Winemaking Notes: The grapes for this Riesling were picked on September 20th, 2022 at 19 brix via machine. It was immediately pressed gently under hermetic conditions, and subsequently cold settled before primary fermentation. Fermentation lasting for 3 weeks at cool temperatures, before being racked off gross and fine lees. The wine was then fined using bentonite, filtered, and left in tank before bottling on June 23, 2023.
