Tasting Notes: An honest and authentic representation of cool / moderate climate Riesling, this wine showcases primary aromatics of candied green apple, Asian pear, honey, and subtle pineapple. This wine was fermented cool and reductively, using selective yeast that creates an ester and terpene driven aromatic profile. The palate is a repeat of the aroma, with notable lemon zest and underripe citrus fruits. Racy, but balanced malic acid rounds of the tasting component, making this a fresh and lively interpretation of Niagara Riesling.
Food Pairings: With a wine that focusses on acid / sugar balance, ideal dishes will contain salt and acid, to highlight the fruit and sweetness in this wine, while keeping all flavours associated with this dish. Choices like Pasta Puttanesca served with garlic bread will highlight both food and wine. Alternatively, a Green Chilli Manhattan Chowder, made with tender white beans instead of customary potatoes will give some spice to balance sugar, but the salsa verde will provide salt to enhance the palate of this wine. A vegetarian / vegan option may be coconut rice bowls, served with curried jasmine rice, cooked with coconut milk and topped with tofu.
Winemaking Notes: These grapes were harvested via machine from our satellite vineyard on East / West Line on September 20th, 2022 at 18.5 brix, and immediately pressed at low pressures under hermetic conditions. The wine was then cold settled, and fermented for 5 weeks at low temperatures to ensure no loss of volatile compounds. Post-fermentation, it was racked twice, fined using bentonite, filtered and remained a stable wine in tank till bottling on July 23rd, 2023.
