75% Pinot Noir, 25 % Pinot Gris

Tasting Notes: Pale pink with notes of cherry, rhubarb, and biscuit on the nose. Dry, fruity, and textured on the palate with bright acidity and a layered finish.

Aging: 5 months in stainless steel, 3 months in bottle (prior to release)

• Goat, Swiss, Emmental, Jarlsberg, Feta cheeses
• Stonefruit, pomme fruit, citrus, most green veggies
• Preserves & jams, cream, barbecue, spicy sauces

Winemaking Notes: Fruit from the Marynissen vineyard was hand- picked. Both varietals were whole cluster pressed together under gentle pressure. Fermented cool in stainless steel before being slowed down and bottled. Fermentation was allowed to continue in bottle until completion. This wine contains sediment due to the aging process.
