Tasting Notes: Bright and zesty with grapefruit, lime, honeydew, and lemongrass with a hint of minerality and gooseberry. A zesty, grapefruit-driven palate backed by bright and zippy acidity with a clean, crisp finish.

Aging: 75% in stainless steel for 6 months, 25% in neutral 500L puncheons for 5 months.

  • Cream sauce, vinaigrettes

Winemaking Notes: Fruit from the Hanck Vineyard was machine harvested, destemmed and partially crushed, and gently pressed. 75% of the juice was fermented cool in stainless steel using select yeast strains to enhance fruity aromas, and 25% was fermented in neutral French oak puncheons to enhance texture. The portions were then blended prior to filtering and bottling.

    Appearance: Clear, bright. Very pale straw colour.
    Nose: A beautiful bouquet of white flowers intermingle with tropical fruit, peach, grapefruit, lime, and fresh cut grass with an undercurrent of minerality.
    Palate: Medium acid, medium body. Crisp, fruit-forward flavours of peach, green apple, grapefruit, and lime with sweet basil and a flinty note on the finish. Well balanced with a round mouthfeel.
    Quality: 90 points – Wine Club Canada. Outstanding.

    Food Pairing: Prawn and salmon burgers with spicy mayo, Greek chicken pasta with olives and feta, strawberry basil avocado toast, buttery lemon grilled fish and asparagus, and arugula and melon salad with crisp prosciutto.
