The 2025 Harvest was a real gem for rosé production, offering ample sunshine and good weather to create the amazing fresh fruit flavours and aromas that we all love in a good rosé; our production method is unique in that the 2025 Stratus Cabernet Franc Rosé is a blend of methods to extract more complexity and freshness from the same wine, using both a direct-to-press whole berry fermentation and a saignée style left on skins for over 8 hours—the whole berry press yields a vibrant, fresh fruit and floral style with bright acidity and tension, while the saignée method produces darker red fruits, body, texture, and structure; we then blend these to create a wine with fresh fruit and floral notes, a soft elegant mouthfeel, great texture, and lively acidity, and we believe this assemblage approach results in a more complex and exciting rosé than using a single method, making Stratus Rosé versatile enough not only as a summer sipper but also for pairing with dishes like salmon, chicken, or lentil salad.
