Hand-picked and hand-sorted very late in the season (November 4!!), the grapes were de-stemmed, partially crushed and left to soak on skins prior to fermentation. After 7 days, fermentation occurred spontaneously in small open-top fermenters. During fermentation, the skins were punched-down by hand 2 times per day. Once fermentation was finished, the wine remained on skins for 5 days before being gently pressed. It was then transferred to French and American oak barrels and aged for 21 months. Our 2021 Cabernet Sauvignon was bottled unfined and unfiltered.
Yes, you read that right⊠beautiful, full-bodied, fully-ripe Cabernet Sauvignon from Grimsby in 2021! As the label says we truly never expected to bottle a varietal Cabernet Sauvignon. We are all fans of the grape but because it is so late ripening it can be difficult to produce in our cool climate. However, Grimsby and Winona continue to surprise us!
Nose:Â Big cassis, blackberry, blueberry and graphite really pop on the nose, with more subtle cured meat and leather notes appearing with a bit of air.
Palate:The palate is dense and powerful, continuing with the blackcurrant, blueberry and graphite theme, but adding sweet basil, peppercorn, mocha, vanilla and that great pancetta and leather background. The tannin is full but soft, the texture is mouth-filling and the length is legendary!
Finish:Â Give this wine lots of air if you want to enjoy now, or age for the next 10-12 years or longer for truly amazing depth and complexity.
