Tasting Notes: We are so proud of this Senchuk Pinot, mostly because it was just so tricky to make, yet turned out so fantastic! There is a flavour weight & density at its core, with lovely acidity and freshness, but there is an elegance and balance that we really haven’t seen before. Also, the layers of earth and dirt have been dialed up to 11, without losing fruit!
Nose: Unfolding effortlessly on the nose; black and red cherry, pomegranate, sugar-beets, and a mossy/brambly character are all there as usual, along with herbal notes of tarragon, sage and oregano that have become the signature of our vineyard. Iron and rare-meat make an appearance as well, with a notable layer of pepper, kirsch and mulberry.
Palate: The palate is without question the smoothest we have ever produced, as if we layered pure silk over wild-mushrooms, fallen-leaves, spearmint and stones! The smoothness belies a tannic structure that is still firm and meant for long-term aging.
Finish: With a final sweep of tannin and acid, the finish goes out so slowly, smoothly and gracefully it almost defies belief. Full-bodied yet balance has always been our philosophy and we feel that this wine epitomizes those aspirations. 13 years in, we can only marvel at the “Winona-Magic” ourselves.
Pairing: The best pairings for Pinot Noir include grilled salmon, roasted chicken, mushroom risotto, and dark chocolate.
Winemaker's Notes: 2021 is the seventh vintage of our flagship Pinot Noir from our estate Senchuk Vineyard, and perhaps the one we are the most proud of. The 2021 growing season was exceptionally tricky, with a lot of humidity and rain throughout the season. However, our property showed a bit of “Winona Magic” in this far western corner of Niagara. The work we put in was crazy, but right on cue, the clouds parted, the rain swept away, and the sun peaked out at our vineyard exactly when it needed it. The result was fully ripe Pinot Noir that was picked on September 30th, with almost identical numbers, flavours and weight to previous vintages. Internally we call it our “miracle wine”.
