Each varietal is fermented and aged separately, allowing their unique characteristics to evolve before they unite just prior to bottling. The blending trial, a detailed process spanning two days, focuses on crafting a bold wine with outstanding aging potential. This exquisite blend features 65% Syrah, 20% Cabernet Sauvignon, 8% Merlot, and 7% Cabernet Franc, aged gracefully for 18 months in a harmonious mix of American and French oak, with 20% being new. This careful maturation imparts both structure and complexity, culminating in a captivating expression that invites you to savour every sip
