Palate: Raspberry, earthy, silky
Winemaking: Hailing from a single site in Naramata, home to some of the Okanagan’s finest Pinot Noir plantings, this wine elegantly showcases the unique terroir of the region. The grapes are destemmed and fermented in an open-top stainless-steel tank, employing the labor-intensive délestage technique, which translates to 'making lighter' in French. In this process, the red wine ferment is drained from its fermentation vessel, leaving only the skins behind. The wine is then gently returned to the fermentation vessel on top of the skins. Rather than enhancing extraction, this method promotes a fruitier character, resulting in a softer wine with inviting complexity.
After fermentation, the wine is gently pressed and transferred into French oak barrels, of which 20% are new, allowing it to age gracefully for 12 months. This limited production bottling yields only 200 cases, ensuring a concentrated and exceptional quality that truly reflects its distinguished origin.
