Tasting Notes: Intense aromas of apricot, candied citrus, caramel, and a hint of nutmeg. Peach and apricot notes on the palate with luscious sweetness balanced by juicy acidity.
Aging: 8 months in stainless steel

Parmesan, blue cheeses
Citrus, stonefruit, tropical fruit
Preserves & jams, vinaigrettes
Winemaking Notes: Mechanically harvested from select Niagara vineyards. Pressed frozen in barrel presses. Sugar concentration of the final juice blend was 37.9°Bx. Fermented warm in tank with selected yeast strains. Fermentation arrested once desired sugar to alcohol ratio was achieved.
Residual Sugar: 212 g/L
