Description from the Producer
VQA Niagara Peninsula
Tasting Notes: On the nose, a beautiful bouquet of fresh cut gardenia, sweet honeysuckle blossoms and gobs of ripe peach paint a picture the sunny days gone by. Never one to disappoint on the follow-through; our Reserve Viognier is as much about texture as it is about flavour. At first, unctuous vanilla envelopes the palate, while focused acidity adds structure through to the finish leaving a lingering note of fresh fennel and warm anise.
Food Pairing: Charcuterie, Dijon chicken, lamb tagine with apricot, butternut squash soup, korma curry, brown butter and sage gnocci, crab dip.
Winemaking Notes: This Viognier is always a late pick to make sure we get full ripeness and that distinctive oily character that we love about this grape. The grapes are lightly pressed with the juicy skins going into our Broken Press Syrah ferments. Fermented and aged in 3 puncheons – 2 French and 1 Acacia wood for 9 months.
Production Info: 2023 growing season was generally cooler until a late summer heat spike accelerated ripening. Syrah and a small portion of Viognier were harvested on the same day.
RS: 2.4 g/L
