- Fermented using non-selected indigenous yeast:
- 60% Fermented whole-cluster in french oak vats + 40% destemmed in stainless steel.
- Matured in neutral French oak barriques for 16-months.
- Bottled without fining or filtration.

Appearance: Deep purple-ruby colour.
Nose: Slightly reductive nose of cherries.
Palate: Medium-bodied, dry, fruity, cherry flavour with balancing acidity. Decant to allow the sulphur note to blow off.
Quality: 90 points - Wine Club Canada. Outstanding. Drink now and through 2023.
Food Pairing: Fried calamari with cilantro-lime rice, classic meatloaf and hasselback potatoes, portobello mushrooms stuffed with garlic, parmesan, and spinach, beef stew with root vegetables, and assorted charcuterie accompanied by hard cheeses.
