Distiller’s Comments: Made from a base of Riesling wine produced from the Limestone Ridge Vineyard. A portion of the base wine was steeped with a blend of 14 botanicals, then added back to the wine, and finally fortified with neutral spirit to achieve 18.5% alc./vol. Our dry vermouth reveals attractive aromas of sweet pear, tropical fruit, white flower, fresh herbs and white pepper. On the palate is ripe sweet pear and herbs complimented by a hint of white pepper.
Service: Serve on the rocks as an aperitif, or in a dry Martini (1 part Tawse Vermouth, 6 parts Tawse Gin, 4 drops of Tawse Orange Bitters), or make a vermouth cream sauce to serve on your favorite fish.
