Description from the Producer
Winemaker's Notes: 70% cabernet franc, 30% gamay
Proclaims itself with a burst of fruit to the nose: mulberry, raspberry and cherry syrup, plus sweet pepper and black olive, spiced by nutmeg and peppercorn.
It’s medium-bodied, fresh, and quaffable, and flavoured of juicy red berries, pomegranate and lingering savoury spice.
Sustainable Winegrowing Ontario Certified
Pairing & Serving: Best enjoyed near 15 ° C with Chicken Provencal, cured meats and sweet mustard, hard cheeses, or crusty bread with savoury jam. Enjoy now to 2028.
Vinification Notes: Gamay from the Wismer Vineyard and cabernet franc from the Keczan Vineyard were picked October 25th and 28th at 22.2° and 23.2° Brix respectively.
Gamay grape clusters remained intact through carbonic maceration, then co-fermented in a concrete tank with destemmed cabernet franc. After pressing, the wine was drained to French oak barrels (majority neutral, 10% first use) to age eight months, filling 254 cases in August 2024.
At the time of bottling, alcohol was measured at 13%; residual sugar at 0 grams per Litre and titratable acidity, 5.9 grams per litre and pH: 3.52.
