Winemaker's Notes: Composition: 83% Seyval Blanc and 17% Chardonnay
Vibrant aromas remind of peach, crabapple jelly and orange blossom. The mouth, tingly-effervescent, holds green apple, pear and lemon cream, finishing fresh and clean.
This is a non-vintage wine. We aim to ensure that each bottling is consistent with the character of the previous.
Vegan friendly. Sustainable Winegrowing Ontario Certified.
Vinification Notes: Seyval Blanc from the Hubel Estate and Chardonnay from the Malivoire Estate were picked in the opening days of harvest with an average of 16.7 Brix° grape sugar.
Following primary fermentation, the wine was transferred to a pressurized steel tank for secondary fermentation in the “charmat” method. There was no malolactic fermentation.
At bottling, alcohol was 11% and RS at 16 g /L; pH: 3.0; Titratable Acidity: 9.2 g / L
