Tasting Notes: An homage to Chablis, this vintage of Chardonnay was done exclusively in stainless steel, with zero oak intervention. The aromatic profile shows vibrant fruit, rooted in quince, starfruit, lime peel and white flower. Once warmed, a subtle note of pastry and brioche appears, due to extended time on lees (autolytic character). The palate mirrors the nose, but shows immense textural components, alongside vibrant acid and integrated secondary characteristics. Main notes of green apple, honey, lemon curd and Bartlett pear, with a hint of white peach and light apricot integrate with the grapefruit-like acid. The finish is sustained with a compact but layered back palate.
Food Pairings: When pairing this wine, aim to pick dishes that focus on salinity and acid, thereby accentuating primary fruit and perceived sweetness. Dishes like Squid Ink Mafaldine Pasta with Uni Butter will complement the wine, while still showcasing the flavours of the food. Alternatively, a summer Crab Carbonara with lemons and capers will highlight the autolytic characteristics of the wine, while still having garlic and salt bring out fruit in the aromatic and palate profile. Vegetarians may gravitate towards a creamy goat cheese Polenta with Ratatouille or a shaved Brussels Sprout salad with a creamy Maple dressing.
Winemaking Notes: Picked on September 28th, 2022 at 20 brix, the fruit was machine-harvested, before being immediately pressed at a gentle pressure, under hermetic conditions. It was then cold settled before primary fermentation commenced. Fermentation lasted for 4 weeks, after which it was left on fine lees to encourage autolytic character. The wine was racked twice, before being fined using bentonite, filtered and then bottled on June 23rd, 2023.
