Description from the Producer
Winemaking: This Méthode Classique sparkling wine is a blend of 34% Chardonnay, 33% Pinot Meunier, and 33% Pinot Noir, all harvested from vineyards within the Kelowna region of the Okanagan Valley. This base wine underwent a second fermentation in bottle and aged sur lie for 25 months. The sparkling wine was then disgorged and topped with a proprietary dosage for the perfect balance of acidity and delicate sweetness. Limited production of 495 cases.
Characteristics: Lemon-yellow with gentle, spiraling bubbles. Delight in aromas of ripe pear, tart apple, and toasted brioche, with a hint of marzipan. This light to medium-bodied sparkling wine has creamy, supple mousse and flavours of Okanagan apple, lemon curd, and a soft almond note that lingers on the finish.
Food Pairings: The perfect celebration wine for any occasion. Wonderful to sip and savour on its own as an apéritif, and perfectly matched with smoked salmon appetizers, sushi, or a platter of mild, creamy cheeses.
Serving Temperature: For a refreshing mouthfeel serve between 10 and 12˚C
