Fragrant and expressive, this Viognier bursts with jasmine, peach, and citrus zest, finishing silky smooth with the bright freshness Niagara does best. The 2023 vintage had a late start, shortening the growing season but reducing the risk of early frost. Moderate summer temperatures delayed ripening while maintaining acidity, and a sunny, dry fall ensured optimal phenolic maturation, highlighting Viognier's aromatics with moderate alcohol—cool climate perfection. Vineyard batches were pressed separately and blended to ferment in temperature-controlled stainless steel, preserving the fragrant primary aromas. The juice was fermented with a yeast strain from Viognier's birthplace, Côtes duRhône, to enhance its classic character. Great varietal character and mouthfeel, with a fragrant bouquet of jasmine, honeysuckle, and citrus zest. Flavours of juicy peach, apricot, a hint of mango, and silky smoothness, balanced by Niagara’s typical fresh acidity. Medium body, extra dry. Seafood, creamy risotto, butter, and sage gnocchi.
