Description from the Producer
Lakeview Wine Co. has built a reputation as a leading producer of premium wines crafting exceptional expressions of cool climate varietals with a modern spin on timeless classics. Winemaker's Techniques The base wine underwent a slow and cool fermentation process in temperature-controlled tanks, ensuring the preservation of its aromatic complexity and bright fruit character. The wine underwent secondary fermentation in the bottle using the traditional method, where the effervescence develops naturally during an extended maturation period. After aging, the bottles were carefully riddled to consolidate the lees, followed by disgorging to remove the sediment. A small dosage was added to balance the wine's acidity and sweetness. Tasting Notes On the nose, this wine enchants with a complex bouquet of citrus and pastry notes. Aromas of crisp green apple, lemon zest, and hints of brioche, along with subtle undertones of almond and a touch of mineral freshness. The citrus and orchard fruit flavours from the nose take center stage, with green apple and lemon continuing to shine. Layers of delicate pastry and almond add depth and richness. The wine's fine bubbles contribute a luxurious texture, and the balanced acidity maintains vibrancy throughout. Food Pairings The wine's crispness and complex flavours complement seafood and shellfish dishes like lobster bisque, oysters, or seared scallops. Varietal 60% Chardonnay and 40% Pinot Noir Alcohol: 12.5% TA: 7.05 g/ RS: 8.1 g/L PH: 3.27
