TASTING NOTES: Very light in colour with an incredible intensity on both the nose and the palette. There is a creamy, rich texture on the mid palate with fine bubbles and just enough acidity to balance the sweetness. Tropical fruits, honey and white flowers, followed on a long finish with flavours of Turkish delight! A wine with elegance and balance.
WINEMAKER’S NOTES: The winter was warmer than normal with only one significant winter storm in mid January. The summer was very warm with above average temperatures and timely rains throughout the summer gave us a wonderful growing season. Harvest began earlier than normal.
The grapes for this wine were harvested in early September, crushed and destemmed before pressing. A cool ferment keeping the intense aromas and flavours vibrant in the wine. After fermentation was complete the wine was fined and filtered before transfer to a closed tank and a second fermentation is initiated by adding sugar and yeast. The CO2 that is produced during this ferment is trapped in the wine giving a fine, creamy bubble in the glass.
The wine is filtered before bottling. Some rain in mid September did give some concerns for the early ripening white grape varieties but in general a great harvest with intense flavours and potential for some great wines.
