Description from the Producer
2021 Sauvignon Blanc was gently pressed as whole clusters, and was left to settle naturally in stainless steel tank. Fermented in neutral French oak puncheons and left to mature for 18 months on lees.
Bottled on without fining or filtration. Vegan friendly.
Once opened, this wine will continue to develop and remain drinkable for 2-3 weeks. We challenge you to experiment with this and watch it develop.
Drink now, with a slight chill, or cellar for up to 15 years.
