Made with freshly pressed skins of gewürztraminer and Viognier re-hydrated with water and a small addition of sugar.
Fermented with wild, ambient yeasts with punch-downs to get the most extraction of flavour from the skins. Bottled unfiltered as fermentation was ending.
Very botanical and floral on the nose with rose hips and pine as well as light fruit notes like pear, Seville orange and hints of lychee. The palate has interesting flavours of Seville orange bitters, wildflower honey, spiced pears and black tea. An intriguing and refreshing beverage. Serve lightly chilled.
Pairs with: Chicken wings, fish and chips, crudité, garlic shrimp and seafood. An easy drinking beverage that pairs well with fun and good vibes.
