This wine is released annually — each year adding a year of aging. The current release was aged about 8 years on lees and was disgorged in December 2025. The following reviews are for the 1st and 2nd disgorgements. 94 PTS — David Lawrason “This is a very fine, detailed traditional method Pinot Noir rose pouring medium deep salmon pink. It has a lovely forthright, detailed nose of Pinot strawberry/cherry, light toast, hay and minerality. It is ‘zero doasge’ therefore very dry, but shows great balance. Very firm without being austere, with great minerality throughout. Great balance, focus and length. Congratulations to winemaker Mackenzie Brisbois. Tasted November 2023. 94 PTS — Michael Godel “ Here flies from the glass a sparkling gambit that has to be winemaker Mackenzie Brisbois’ most conventional wine. Just Pinot Noir and from an inverted vintage that gets better and better with time. A 2017 of wildly fantastical aromas and gravitas that make every aspect, component and iterated moment shine. This is a scintillant of excitation that delivers succulence we richly desire from Ontario sparkling wine. The mix of heady perfume, intensity of palate raciness and texture sliding into structure is truly something. If you are not put into an absolute tizzy and hypnotized by this fizz you may not be paying attention. Drink 2023-2028. Tasted November 2023. 93 PTS — Rick VanSickle “This s pectacular 100% estate Pinot Noir now has 72 months of lees aging with zero dosage. It has such an interesting and enticing nose of fresh red berries, warm bread/biscuit, toasty brioche, spice, and toasty almonds. It has an elegant, persistent bead in the glass with tart forest berries, cran-cherries, citrus, brioche, toasty/nutty notes, spice and a lifted, bright finish. Beautiful sparkling wine and just getting better with each disgorgement . Tasted April 2025. Hand harvested fruit was pressed and cold settled before fermentation. This is one of the only wines we have inoculated and filtered to try our hand at making a classic traditional method wine. Bottled for a secondary fermentation in the summer of 2018. Disgorged December of 2025 with zero dosage.Eight+ years on lees! Beautiful light apricot hues define this wine. Notes of brioche, pomegranate, nutmeg spice and peach are accentuated by elegant floral undertones. On the palate the wine is complex, with toasty, nutty notes and citrus zest wrapped around a frame of lively acidity. Subtle, deceptively complex, crisp and delicious! This wine will be disgorged and released in stages over the next couple years!
