Hand picked and hand sorted from reduced crop. Appassimento style. Aged 12 months in newer French and American oak barrels.
Appearance: Deep ruby colour.
Nose: A classic but interesting nose of savoury red berries, toasted vanilla, oak spice, violets, plum, and mocha, with a light sprinkling of herbs and anise, and hints of jalapeno peppers.
Palate: A medium bodied wine that highlights bright fruit, ripe cherry, raspberry, followed with softer tannins (for a Cab Franc), and licorice, campfire smoke, bay leaves and perky acidity through the finish.
Food pairings: Try this wine with grilled burgers, roast duck, pasta with red sauce and meatballs, or a hearty chilli. Pairs perfectly with Camembert, Gorgonzola, or goat cheese. For those not keen on meat, try it with recipes that include nuts, mushrooms, and/or soy sauce. Enjoy now, or put away until 2022.

Appearance: Bright. Semi-opaque. Garnet core, dark pink rim.
Nose: Medium aromatic intensity. Dark cherry, plum, smoke, mocha, jalapenos, cigar box.
Palate: Medium acid, medium tannin, medium body. Black cherry, cigar smoke, green bell pepper, black pepper.
Quality: Very good quality. Aged 12 months in newer French and American oak barrels. Nice lingering finish. Could still cellar for a year or two. Rounded flavours. A pleasant Cab Franc that is drinking very well right now.
Food Pairing: Bruschetta, herb crusted duck and other game birds, barbecued ribs, meatloaf, Ragu Bolognese, salami and truffle pizza.
