Ripe Guava aroma, subtle notes of freshly cut hay grass. Tropical fruit carries through to palate, linked to together by electric acidity strung together with salt and mineral notes. Layered texture of finely folded tropical fruit and herbaceous nuances.
Winemaking: 1/3 was fermented in stainless steel using non-selected (wild) yeast and 2/3 was fermented in French oak puncheons (500L barrels) using non-selected yeast. Both were used in these vessels for 18 months prior to blending together in stainless steel. Bottled unfined and unfiltered. 208 cases (9L) produced.

Nose: Minerally, slightly reductive nose of green plum, cut grass and lanolin with a touch of oak spice.
Palate: Medium-bodied, dry, passionfruit and muscat flavours.

Food Pairing: Pork tenderloin with pineapple salsa, chicken tagine with apricots, zucchini and goat cheese quiche, sole fillets with creamy pesto, and grilled shrimp with garlic butter.
