TASTING NOTES

A classic New World interpretation of Sauvignon Blanc, primary aromatics are rooted in guava, passion fruit, citrus zest, green apple, underripe melon and gooseberry. These notes come mostly from aromatic compounds called pyrazines and thiols that are abundant in Sauvignon Blanc grapes and are preserved thanks to a slow and extremely delicate cool vinification. The palate mirrors the nose, with focus on ripe green citrus fruits, mandarin / clementine, and passion fruit. The acid is vibrant, yet balanced, with a focus on a clean, linear palate, with medium finish, owing to the delicate nature of this stylistic iteration.

The fruit was hand-picked on September 15th, 2022, at 21 brix from our satellite farm on East/West Line. Thereafter, the fruit was pressed immediately at low pressures, under anaerobic conditions, and racked off solids before a 5 week cool fermentation. Post-fermentation, the wine was fined using bentonite, filtered, and left in tank till bottling on June 23rd, 2023.

FOOD PAIRINGS AND SERVING TEMPERATURE

When pairing a delicate, yet vibrant wine like this, look to foods that have high acid and high salt, thereby increasing the perceived sweetness and fruitiness of the wine. Options like roasted whole Branzino with a caper butter will allow all the primary fruit in the wine to sing, while also adding freshness to the dish. Alternatively, a classic Ceviche will pair excellently, especially given the citrus-dressing. Vegetarians / vegans may want to consider a dish like Roasted Sweet Potatoes with Charred Leeks, and a lemon-Tahini dressing.
