Tasting Notes
Nose: White peach and grilled pineapple are followed by hints of spice like cardamom and sea salt.
Palate: There is a beautiful creamy richness on the palate along with wet stone, grilled pineapple, warmed pine nuts, and hints of flint.
Finish: The finish is silky smooth and exceptionally long but is eventually overtaken by wet-stone and crisp acidity. A truly beautiful example of Niagara Chardonnay!
Pairing: Pair this wine with meaty fish like halibut or cod. Shellfish, however, is my favourite pairing with lobster, shrimp, crab and scallops.
Winemaking Notes: This is a perfect blend of Chardonnay grown in two different vineyards. The grapes from Grimsby Hillside Vineyard come from 3 separate blocks across 90 acres.
Hand-picked and hand-sorted on September 16th, 23rd, 24th (Grimsby Hillside) & September 30th (Senchuk) the grapes were whole-cluster pressed and kept separate. The juice was allowed to settle prior to being racked to French oak barrels (25% new; 75% old) for fermentation by way of indigenous yeast and malolactic bacteria. Aged for 10 months, the 2023 Chardonnay was bottled on September 1, 2024.
