Tasting Notes: Our goal for our Sauvignon Blanc is to reflect the unique Niagara terroir and this wine always delivers. 2024 was a warm, slightly wet early season, but beautiful dry harvest characterized by average crop levels on the vines.
Nose: Even more intensely tropical than usual, aromas of mango and passionfruit leap forward with the kiwi, lemongrass and lime-leaf more in the background.
Palate: The palate has bright acidity matched by a slightly fuller, creamier texture, with passionfruit dominating, followed by dragon-fruit, key-lime, lemongrass and sweet thai basil immediately behind.
Finish: The finish is smooth and long, with notable flinty minerality appearing at the end. Drink now or in the next 3 years.
Pairing: Enjoy with pan-fried halibut, fresh pesto and anchovy paste pasta, or lemon & herb roasted chicken.
Winemaking Notes: Our 2024 Sauvignon Blanc was harvested on Sept. 24, 2024, and gently pressed into a stainless-steel tank where it settled for two days before being racked off lees. We chose to inoculate with a selected yeast and fermented at a very cool temperature to preserve its freshness and beautiful aromatic. After fermentation, it was split into two different vessels for aging: a portion of wine was transferred into Acacia and neutral French oak puncheon, and the remaining wine stayed in stainless-steel on lees for 7 months. We bottled this wine in March 2025.
