WINEMAKING The grapes for the 2025 Gray Monk Rosé Limited Edition are composed of 40% Merlot, 34% Gamay, and 26% Cabernet Franc. The grapes were left on their skins just long enough to develop a delicate pink hue. Once pressed, the juice fermented over 21 days in stainless steel tanks, with careful temperature control to preserve its pure, vibrant fruit expression. After fermentation, the varieties were blended to achieve perfect balance and then rested and matured in stainless steel tanks. FLAVOUR PROFILE Pale rose petal pink in colour with aromas of strawberry, raspberry and ripe melon. This light-bodied wine has flavours of red currant, cranberry and a hint of floral that balances the palate with a bright acidity. Pairs well with light salads, pesto chicken, mild cheeses, and ripe summer tomatoes.
